It should. Cat6 should pass lower data rates just fine. You'll just get link lights or not.

It will be able to test Ethernet connection if your device has a network card that transmit the signal.

Q: Does this work on non-gigabit connections as well?

Yes, this adapter is backwards compatible with non-gigabit connections.
