Fairly difficult to mix in liquids
This product has many uses and can be used in soups, stews, sauces, jams and spreads. I wanted it mainly for home-made ice cream and some sauces.I was a little concerned that this product was algae based (I have had other algae based products that have tasted disgusting, a little like stagnant pond water.)First I tried it in a glass of cold water, it was a little difficult to get it to dissolve, but once it did, I was delighted to discover that it was both odourless and tasteless. The second experiment I tried was in a glass of hot water, again, same results, tricky to get it to dissolve, and it was tasteless and odourless the same as the cold water.The viscosity change was better than I imagined, as I only sprinkled a small amount (I couldn't measure as I couldn't get the top off to measure the amount.) I don't think it's going to take a lot of the product to make a big difference to the viscosity of things and won't affect the taste or smell.In conclusion, it is going to be a very versatile product in my kitchen and at £8.88 for 4oz (at time of review) it represents great value for money as a little will go a long way and the pot should last a long time!

Decent price for this quantity
I haven't had much cause to use this product yet but I have used it in some basic experimentation (eg thickening up some hot sauces I'd made earlier) and certainly it seems like a good, honest product. It helped to reduce the amount of separation in the bottle, with less thinner liquid evident at the top.I then went to do a value for money assessment - but, to my surprise, there really aren't many people offering this product for sale, with just one other manufacturer on Amazon retailing it as a food grade ingredient, and not many more anywhere else. If you're only looking for this sort of amount, then this is the best value of the two on Amazon, coming in at £7.79/100g against the other's £8.95/100g. However, it if becomes something you use a lot of then it's worth looking at that other brand, which offers sodium alginate in more quantities than this one's single size of 114g. For example, if you go for the other's 500g tub the per 100g price drops dramatically, to £3.99, with even bigger savings at higher weights.Still, for the average home cook who is likely to have this bottle in their cupboard for months and find that's enough, a good product at a good price.

Great Product!
I wanted to try this to thicken various low-fat desserts I like to make. I dissolve a small amount in water, let sit overnight and use the next day. I have used it to thicken and stabilise unbaked cheesecakes made with zero fat yogurt and curd cheese -perfect. I have used it to make very low fat carrot cake topping which tends to be too runny, again, perfect. It's just brilliant. It doesn't affect the flavour either. I do wish there were better instructions though and perhaps some recipe ideas. I also wish the lid unscrewed so I could spoon it out. Definitely a welcome addition to my store cupboard. Recommended.

A great product
Sodium Alginate PowderIt’s almost time for soups and stews for dinner with a lovely chunk of white crusty bread Mmmmmmmmmm, but sometimes these meals can end up a little on the runny side; as well as homemade custard that I can NEVER get thick enough, no matter what I do, or homemade ice-cream that goes too hard in the freezer. This is what this product is perfect for.It arrives in a little pot with the expiry date printed on the underneath of the box - my one expires in May ‘29, and the usage instructions printed on the side.So far, the only thing I do not like about this product is that you cannot remove the lid to dip a small spoon into it. It only has a tiny pouring hole and a few tiny holes to shake the product out. I prefer spooning as you can get the exact amount that you need. With the pourer, it will be difficult to put any excess back, and sprinkle holes ALWAYS clog up in my kitchen.Overall I am happy with the product and at £8.88 (at the time of writing this review) for 114g, it’s not too expensive for something that will rescue a whole meal/dessert. Gluten free, so won’t hurt my tummy.As always, I have added a few photos to this review which I hope you find helpful.

Made some incredibly smooth scoopable ice cream
I love making two-ingredient ice cream base (heavy cream and condensed milk); however, to make it super smooth and more of a soft serve, I have been adding a flavour-free alcohol such as vodka and glucose. I have been testing out other options and have tried agar agar, which was okay but not as successful as the vodka/glucose. When I saw this product, I thought I'd try it.A small addition of the Sodium Alginate powder certainly did the trick; the ice cream was smooth, soft, and scoopable straight from the freezer. Like other reviewers, my only issue is the packaging. It isn't easy to pour out a precise amount of the powder. That taken into consideration, I would be happy to recommend this product and will repurchase when needed. I am now looking forward to seeing how else I can use it.A very solid 4 stars.

For anyone into creative cooking or baking, this powder is a fun and reliable
I’ve been experimenting with molecular gastronomy, and this sodium alginate powder has been fantastic! I used it to make caviar spheres, and it worked perfectly smooth texture and consistent results every time. It also thickened my desserts and sauces beautifully without altering the taste.
